Thai Curry and Shrimp

Ingredients

  • 1 Pound of medium or large shrimp cleaned
  • 2 Large white potatoes peeled and cubed
  • 2 Carrots peeled and sliced
  • 1 Red bell pepper sliced
  • 1 Can coconut milk
  • 2 Tablespoons curry paste
  • 1 Tablespoon fish sauce
  • 1 Lime

Directions

  1. Add the coconut milk to a large pan on medium heat until all solids have melted.
  2. Add the curry paste, fish sauces, lime juice and zest.
  3. Cover and keep on a low simmer while you prep veggies.
  4. Add the veggies
