Loaded Potato Soup

Ingredients

  • 4 Cups peeled and diced white potato
  • 4 Slices thick cut ban
  • 1 Onion diced
  • 1 Cup chicken stock
  • 1 Cup heavy whipping cream
  • 1 Cup shredded cheddar cheese

Directions

  1. Dice the bacon and cook in large soup pot over medium low heat. When done remove bacon from pot while leaving the bacon grease.
  2. Sautee onions in the bacon grease until carmalized.
  3. Add the stock and cream to pot.
  4. Once hot add the potato, cover, and simmer until potato is good and soft.
  5. Mash the potato slightly in order to thicken the soup. Leave plenty of chunks behind.
  6. Stir in the shredded cheese until melted.
  7. Adjust texture as desired by adding more stock or cream.
  8. Eat up! Maybe add some green onion or sour cream to garnish.
