Thai Curry and Shrimp
Ingredients
- 1 Pound of medium or large shrimp cleaned
- 2 Large white potatoes peeled and cubed
- 2 Carrots peeled and sliced
- 1 Red bell pepper sliced
- 1 Can coconut milk
- 2 Tablespoons curry paste
- 1 Tablespoon fish sauce
- 1 Lime
Directions
- Add the coconut milk to a large pan on medium heat until all solids have melted.
- Add the curry paste, fish sauces, lime juice and zest.
- Cover and keep on a low simmer while you prep veggies.
