Ingredients
- 4 Cups peeled and diced white potato
- 4 Slices thick cut ban
- 1 Onion diced
- 1 Cup chicken stock
- 1 Cup heavy whipping cream
- 1 Cup shredded cheddar cheese
Directions
- Dice the bacon and cook in large soup pot over medium low heat. When done remove bacon from pot while leaving the bacon grease.
- Sautee onions in the bacon grease until carmalized.
- Add the stock and cream to pot.
- Once hot add the potato, cover, and simmer until potato is good and soft.
- Mash the potato slightly in order to thicken the soup. Leave plenty of chunks behind.
- Stir in the shredded cheese until melted.
- Adjust texture as desired by adding more stock or cream.
- Eat up! Maybe add some green onion or sour cream to garnish.
