Ingredients
- 4 Cups V8 Tomato Juice or Clamato
- 4 Vine Ripened Tomatos
- 1 Cucumber
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Red Onion
- 4 Cloves Fresh Garlic
- 3 Tbsp Fresh Lemon Juice
- 2 Tbsp Red Wine Vinegar
- 1 Tbsp Balsamic Vinegar
- 2 Tbsp Olive Oil
- 1/4 Cup Fresh Parsley
- 5-6 Fresh Basil Leaves
- Salt & Pepper to Taste
Preparation
- Mince Garlic and sauté in olive oil
- De-skin, de-seed, and chop the tomatoes
- De-seed and chop the cucumber
- Mince the bell peppers and onion
- Chop parsley and shred basil
- Combine all ingredients, cover and chill at least a few hours (overnight is best).
